On a quiet night, listening to the whisper of the surf and surrounded by contented guests, you’ll think it all seems so easy. Even complicated dishes like grilled mahi-mahi on a bed of corn, shiitake mushrooms, and spinach with an Asian sauce of red curry, ginger, lime juice, tomato, soy, and coconut milk make it almost impossible to imagine that hardships like hurricanes ever happened.
